Choco-Coco Obsessions

It is no secret that I love Shakeology. For those new to Shakeology, it is essentially a protein powder packed with nutrients and superfoods. I can drink it alone (water + powder) or mixed with a wide array of ingredients (my top two combos are peanut butter + banana and Nutella + almond milk).

Today I played around with coconut milk + chocolate vegan Shakeology and I am obsessed with it. First, however, I must disclose my biased love for all things coconut. I grew up in the Caribbean and in my backyard I had two beautiful coconut trees, ergo a virtually endless supply of coconut all year long (erm, visit Puerto Rico for more of this awesomeness). Anytime I have the opportunity to incorporate coconut into the kitchen, I do it without hesitation.

The taste of the coconut flavors was not too strong next to the chocolate flavors of the protein shake, yet it added silkiness to the drink and a refreshing aftertaste. Perhaps this combination is best in ice cream form–stay tuned for that update!

Update: I tried adding ½ a medium banana to the Shakeology + coconut milk combination and LOVED IT! 

Ingredients: 

  • 1 scoop (40 grams) of Chocolate Vegan Shakeology (or other chocolate-flavored protein powder)
  • ½ cup coconut milk
  • ½ cup of water*
  • 1 cup of ice

*You can use 1 cup of coconut milk if you normally do not use any water in your protein shakes or smoothies.

Procedure: 

Combine all ingredients in a blender and mix until desired consistency is achieved. Personally, I make my smoothies and denser shakes in a Nutribullet because I tend to favor a more liquid consistency (#juicerlifeprobs).
